Yongchun Mature Vinegar
Yongchun mature vinegar is made from glutinous rice and red yeast rice and aged for more than three years.
A large clay vat holds black vinegar, a big wooden ladle pours it into a small blue-and-white bowl, a plate of dumplings with scallion and a plate of dressed cucumber sit beside it, and a cloth-covered jar stands behind.
Vinegars brewed from grain or fruit, made by solid-state or liquid fermentation.
Yongchun mature-vinegar making entered Quanzhou’s seventh municipal list of representative intangible heritage items in 2024; it is made from glutinous rice, red yeast rice, sesame and sugar and aged for more than three years. A Yongchun County government page adds that the vinegar-making technique entered Fujian’s provincial intangible heritage list in June 2009.
