The traditional craft of Shahe rice noodles, centred on Guangzhou, entered the fifth national heritage batch in 2021.
A woman cuts a roast goose into pieces on a round wooden block beside a small dish of sauce, a clay pot of slow-cooked soup steams nearby, a basket holds ginger, scallion and coriander, and a lake and hills lie beyond.
The regional cooking of Guangdong, Hong Kong and Macau, prized for live, fresh ingredients and light flavours.
On the China Intangible Cultural Heritage website, the traditional craft of Shahe rice noodles is listed under rice-noodle making, declared from Guangzhou, Guangdong, and was added to the fifth batch of the national representative list in 2021. The item page says Shahe noodles are made from late-season indica rice, steamed until set into a sheet and then lifted out, and that the craft is centred on Guangzhou. It describes a texture that is thin, translucent and springy, with a supple, smooth bite.
