Nanxiang Xiaolong Bun Craft
The Nanxiang xiaolong bun craft began in Nanxiang, Jiading, and is on the national intangible heritage list.
A richly sauced eight-treasure duck stuffed with glutinous rice and red dates sits on a plate, a plate beside it holds oil-burst river shrimp, and a dish in the foreground shows bright green clover greens with coils of pork intestine.
The benbang and Haipai cooking of Shanghai, rich and dark-sauced, drawing on flavours from many places.
The national intangible-heritage entry lists Nanxiang steamed-bun making under traditional wheat-food crafts, project VIII-160, announced in the fourth batch in 2014 as an extension item and declared by Jiading, Shanghai. It traces the craft to Nanxiang and records hand processes including selection, dough work, rolling, wrapping and steaming.
