Suzhou-Style Pastries
A wooden tray holds flower-stamped cakes, flaky swirled pastries and squares of steamed cake set with red dates, a hand presses cake flour into a wooden mould, and a few stamped cakes sit beside it.
Cakes and pastries of every kind, baked, steamed or fried.
The Suiyuan Shidan ranks soft fragrant cake by place, putting the cakes of Dulin Bridge in Suzhou and of Tiger Hill in the first two places.
In the section on light refreshments of the Suiyuan Shidan (1792), the entry on soft fragrant cake ranks it by place: the cake made at Dulin Bridge in Suzhou comes first, the one from Tiger Hill second, and the one from the Baoen Temple outside the south gate of Nanjing third. The book does not use the term Suzhou-style pastries; what it records is this ranking of soft fragrant cake by place.
