Cakes and pastries

Introduction

Cakes and pastries of every kind, baked, steamed or fried.

Pastries are cakes and biscuits made from flour, rice flour, sugar and oil, baked, steamed or fried, sweet or savoury and sometimes filled. The national standard divides heat-processed pastries into baked, fried, steamed and other kinds, with a class of cooked-flour cakes as well, and it divides pastries by regional style into the Beijing, Suzhou, Cantonese, Tianjin and other styles. The Song book Dong Jing Meng Hua Lu already records assorted guozi, the cakes and sweets of the day, sold in the streets. Pastries tied to a festival take the festival as their main class, and everyday steamed buns and flatbreads belong to Steamed Buns and to Flatbreads.
