Land of many noodles

Introduction

The regional cooking of Shanxi, with a great variety of flour foods and a marked vinegar aroma.

Shanxi cuisine is the regional cooking of Shanxi, known above all for its flour foods and its aged vinegar. Flour foods are shaped by rolling, pulling, shaving, pressing, grating, pinching, pushing through a perforated board and flicking from a bowl, and come in more than two hundred and eighty kinds. A few drops of aged Shanxi vinegar are often added to a bowl of noodles for flavour. Steamed oat-flour rolls are a staple in the mountains of northern Shanxi, Xinzhou and Lüliang, and were added to the Shanxi provincial intangible heritage list in 2009. Knife-cut noodles are often seen as the emblem of Shanxi's flour foods.
