Tibetan Cuisine
Tsampa and butter
Introduction
The traditional food of the Tibetan people, with tsampa, butter tea and barley wine.
Tibetan cuisine is the traditional food of the Tibetan people. In farming areas the staple is tsampa: highland barley or peas are roasted, ground into flour and eaten mixed with tea, while in pastoral areas beef and mutton are the staple foods. Butter tea is churned from butter and hot tea in a wooden churn, and barley wine is also a drink people enjoy. Yoghurt and dried curd are common everyday foods. The traditional food of the Tibetan communities of Qinghai and Gansu is also classed as Tibetan cuisine.
