Air-dried and heat-dried meats such as beef jerky and rou fu.
Dried jerky covers meat products dried in the air or by heat, and beef jerky is one of them. Jerky, also called rou fu, is meat that is cured and then dried, and it may be made from chicken, pork or beef. The Zhou li already records dried meats called fu and xiu. Smoked jerky belongs to Smoked Foods, cured pork to Cured Pork and Sausage, and braised and sauced cooked meats do not belong here.
