Soy milk set into tofu

Introduction

Tofu set from soy milk, in soft, firm, dried, fried and frozen forms.

Tofu is a soy food made by setting soy milk with a coagulant, and it comes soft, firm, pressed and dried, fried and frozen. The usual coagulants are bittern, gypsum and glucono-delta-lactone, and each gives a different texture. On the origin of tofu there are several views, from the Han to the Tang and Song, and the question is not settled. Fermented tofu belongs to Fermented Curd and Douchi, tofu eaten as a snack to Bean Snacks, and vegetarian dishes to Vegetarian Cuisine.
