Two hands lift yuba on thin rods from a large steaming pot, soy milk runs from a stone mill into a wooden pail, a blue-and-white bowl holds soy milk, a bamboo tray holds stacked yuba, and yuba strips hang to dry on a wooden rack.
Soy Milk and Yuba
Soy milk and yuba
Introduction
Soy milk, and yuba and bean-curd sticks made from it.
Soy milk and yuba cover soy milk and the soy foods made from it, such as yuba and bean-curd sticks. Soy milk is made by grinding soybeans with water, filtering and boiling, and it is drunk sweet or salty. Yuba is the thin film that forms on heated soy milk, lifted off and dried; when the film is hung to dry and shrinks into long strips, it becomes bean-curd sticks. Tofu pudding belongs to Tofu or, by how it is served, to Sweet Soups, and vegetarian dishes made from these foods belong to Vegetarian Cuisine.
