Introduction
Baijiu aroma types other than the sauce, strong and light aromas.
Other baijiu aroma styles cover the aroma types beyond sauce, strong and light. The national standard has parts of its own for the rice, feng, chi, te, Laobaigan and Fuyu aromas, and there are also the sesame, mixed strong-and-sauce and Dong aromas, among others. The methods of making them differ; te-aroma baijiu, for example, is made mainly from rice and fermented in pits built of red stone. For ease of classing, these types are gathered into one class. Sauce, strong and light aromas each have classes of their own, and particular spirits are entries.
