Rice and fruit wines

Introduction

Rice wines of the sweet fermented-rice kind, and wines brewed from fruit.

Rice and fruit wines cover rice wines such as the sweet fermented glutinous rice called laozao, and wines fermented from fruit, of which grape wine is one example. Laozao is made mainly from glutinous rice that is soaked, steamed, cooled and mixed with a starter to ferment, and it tastes sweet and mellow; its alcohol is typically about two to five per cent by volume and sometimes above eight, which is not low. It is used in dishes such as sweet fermented rice with small rice balls, laozao porridge and laozao with eggs. Bayberry steeped in strong baijiu is a steeped blended liquor and belongs to Blended and Infused Liquors, not here. Beer belongs to Beer and Highland Barley Brews, and huangjiu has a class of its own.
