Baked and griddled

Introduction

Shaobing, griddle bread, guokui, naan, spring pancakes and other wheat flatbreads.

Flatbreads are the baked and griddled breads and filled cakes of wheat flour, such as shaobing, griddle bread, guokui, naan, spring pancakes and huoshao, and they serve as everyday staples. Shaobing is often baked in a large open clay oven. The Qi Min Yao Shu records a marrow flatbread baked in a hu bing oven, and the Song book Dong Jing Meng Hua Lu also lists hu bing. Sweet shortcrust cakes belong to Pastries, mooncakes to the Mid-Autumn festival foods with Pastries as a second class, and street-sold pancakes and meat-filled buns to Street Snacks.
