Steaming is the method of heating food with steam, using a steamer, and it is usually divided by heat into strong-fire, medium-fire and slow-fire steaming, with steaming over water as another form. Fish, meat, vegetables and flour foods can all be steamed. The Sui Yuan Shi Dan has a steamed duck that is steamed over water until done. Steamed buns, filled buns and dumplings are classed as flour foods by form and do not belong here.
