Yellowed leaf

Introduction

Tea in which a yellowing step after fixing turns the leaf yellow.

Yellow tea is made by adding one yellowing step to the green tea process: fixing, rolling, piling and yellowing, and drying. Yellowing means piling the leaf after fixing and rolling so that it turns yellow, and this is where yellow tea differs from green tea. The other kinds of tea have classes of their own, and white, green, oolong, black and dark teas are not here; yellow tea made into scented or compressed tea is found under Reprocessed Tea.
